Recipe: Keto Sourdough Bread with Lupin Flour

Ingredients:

  • 1 1/2 cups lupin flour
  • 1/4 cup coconut flour
  • 1/4 cup psyllium husk powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup plain Greek yogurt
  • 4 large eggs
  • 1/4 cup lukewarm water
  • 2 tablespoons apple cider vinegar
  • 1/4 cup unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan and line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the lupin flour, coconut flour, psyllium husk powder, baking powder, and salt. Mix well to ensure even distribution of dry ingredients.
  3. In another bowl, whisk together the plain Greek yogurt, eggs, lukewarm water, and apple cider vinegar until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix thoroughly until you have a smooth and thick batter.
  5. Quickly stir in the melted unsalted butter, ensuring it is well incorporated into the batter.
  6. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes or until the bread is firm and has a golden-brown crust. A toothpick inserted into the center should come out clean.
  8. Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, use the parchment paper overhang to lift the bread out of the pan and transfer it to a wire rack to cool completely.
