Recipe: Keto Taco Casserole


For the Taco Casserole:
  • 1 pound ground beef (or ground turkey, chicken, or a meat substitute for a vegetarian option)
  • 1 packet (1 ounce) taco seasoning mix (look for low-carb or homemade options)
  • 1/2 cup water
  • 1 1/2 cups shredded cheddar cheese (or a mix of your favorite keto-friendly cheeses)
  • 1/2 cup sour cream
  • 1/2 cup cream cheese, softened
  • 1/2 cup diced tomatoes, drained
  • 1/4 cup diced red onions
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste
For Topping:
  • Sliced avocado, sliced jalapeños, extra sour cream, or hot sauce (optional)


  1. Preheat your oven to 375°F (190°C). Grease a 9×9-inch (23×23 cm) baking dish.
  2. In a skillet over medium-high heat, cook the ground beef (or your preferred protein) until browned and cooked through. Drain any excess grease.
  3. Add the taco seasoning mix and 1/2 cup of water to the cooked meat. Stir well and simmer for a few minutes until the mixture thickens and is well combined. Remove from heat.
  4. In a mixing bowl, combine the softened cream cheese, sour cream, and half of the shredded cheddar cheese. Mix until smooth and well combined.
  5. In the prepared baking dish, spread the cooked and seasoned meat evenly across the bottom.
  6. Layer the diced tomatoes, diced red onions, and optional sliced black olives over the meat.
  7. Spread the cream cheese and sour cream mixture over the vegetable layer.
