Ingredients:

For the Taco Casserole:
  • 1 pound ground beef (or ground turkey, chicken, or a meat substitute for a vegetarian option)
  • 1 packet (1 ounce) taco seasoning mix (look for low-carb or homemade options)
  • 1/2 cup water
  • 1 1/2 cups shredded cheddar cheese (or a mix of your favorite keto-friendly cheeses)
  • 1/2 cup sour cream
  • 1/2 cup cream cheese, softened
  • 1/2 cup diced tomatoes, drained
  • 1/4 cup diced red onions
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste
For Topping:
  • Sliced avocado, sliced jalapeños, extra sour cream, or hot sauce (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×9-inch (23×23 cm) baking dish.
  2. In a skillet over medium-high heat, cook the ground beef (or your preferred protein) until browned and cooked through. Drain any excess grease.
