TIPS:
The dough will be stickier, thus difficult to handle. It is because of the egg whites (whipped). This will give us lighter & tastier cookies after baking. If you don’t have time to whip the egg whites or you want the firmer dough, that will be easy to handle.

FAQs:
Does hazelnut flour have an expiry?
Yes, if you buy the flour of hazelnut from the store, you will see an expiration date on the pack. If you are making your hazelnut flour, keep it in the fridge for a longer stay.
Is it necessary to beat the egg whites?
You know that whipping gives the ability to hold more air to the batter. This process will have you lighter cookies with a soft center. You have the choice to skip this step if you are short on time.
If the market doesn’t supply the flour of hazelnut, what should I do?
There is no need to worry if you don’t get the hazelnut flour from the store. Plug in your food processor & process the hazelnuts in it. You have the coarse-ground hazelnut meal. It will be alright to make the cookies. Don’t overprocess the hazelnuts; otherwise, you will end up with the butter of hazelnuts.
Which diet allows the use of hazelnut flour?
Hazelnut flour is allowed in a low-carb, grain-free, paleo, gluten-free, and vegan diet.
How can we have the non-stickier/firmer dough?
Don’t whip the whites of eggs. Only mix the egg whites with all other items. This way you will have the firmer dough. They will not be as soft & light as the cookies with whipped cream.
