INGREDIENTS:
FOR THE KEBABS:
- 12 oz lean ground beef
- 4 small light tortillas
- One medium diced red onion
- ¾ cup finely diced red bell pepper
- 1 handful chopped cilantro finely
- 1½ tsp garlic powder
- 1 tsp paprika
- Half tsp salt
- 3 oz reduced-fat shredded mozzarella
FOR THE LIGHT GLAZE:
- 3 tbsp tomato sauce
- 1 tsp honey
- Half tsp garlic powder
- 1 tsp paprika
- Quarter tsp salt
- 1 pinch black pepper
- 2 tbsp water

EXTRA-LEAN GROUND BEEF:
- It gives savory taste and protein to the recipe. Ground beef hold the filling and spread it evenly on the tortillas. You may use extra-lean ground turkey as per your preference.
RED BELL PEPPER:
- This pepper gives moisture and a natural sweet taste to the filling. It gives colorful look to the kebabs when we slice them. You may use orange bell pepper as another choice.
REDUCED-FAT MOZZARELLA:
- It makes the stretchy and creamy pockets in the kebabs. Finely shredded cheese spreads evenly and give better results. You may use part-skim mozzarella as an alternative.
TOMATO SAUCE:
- This sauce gives slightly tangy base that works well with the sweet honey. It gives rich color to the outside of the kebabs. Include tomato passata as another option.
INSTRUCTIONS:
- First, include baking paper on the sheet and warm the oven to 400°F.
- Mix the extra-lean ground beef, red onion, bell pepper, cilantro, garlic powder, salt, and paprika in the bowl.
- Put one small tortilla flat on the surface and spread a thin layer of beef mixture on it.
- Keep the layer thin and repeat the steps with the remaining tortillas.
- Sprinkle reduced-fat on the beef and use 3/4 cheese per tortilla.
- Roll the tortilla into a log and keep them firm so they hold their shape well.
- Cut the tortilla into small pieces around 1½ inches wide then thread them in the skewers.
- Put the kebabs on the sheet to bake for 23 minutes at 400°F.
- Mix tomato sauce, honey, paprika, salt, garlic powder, black pepper, and water to make a smooth glaze.
- Take the kebabs from the oven and brush thin layer of glaze on the kebabs.
- Bake the kebabs for another ten minutes and brush lightly with more glaze.
- Lastly, remove the kebabs from the oven and cool for 5 minutes then serve.
